This coffee was carefully hand-picked in order to select only the ripest cherries and then hand-sorted toremove any defects. The coffee was sundried on raised beds in temperature-controlled conditions until
the ideal moisture content is achieved.
Gesha is originally from Ethiopia and cherries usually ripen to be red. Out of 1000 Gesha trees we
occasionally come across 1 or 2 trees producing yellow cherries, these are Yellow Gesha. This variety was planted in Jardines del Eden in 2019.

Jardines Del Eden employs biodynamic principles for the growth and production of the coffee avoiding the use of fertilizers.

This microlot’s cherries were exposed to dry aerobic fermentation for 24 hours before being placed inside Grainpro bags for 50 hours at a temperature below 22℃. Then, the whole fruits were air-dried on raised beds until achieving an 11% moisture content.
